Roasted garlic kicks things up a notch. Every so often I will roast a batch to keep on hand to add to many a dish – from hummus to potato-leek soup to mayonnaise to salad dressing to mashed yams, roasted garlic adds that je ne sais quoi that every Monday night meal needs.

Roasted Garlic
A Recipe

Ingredients
2 heads of garlic, papery outer skins discarded, and 1/4 inch cut off top
Approximately 3 tablespoon extra-virgin olive oil (a few drizzles)
Pinch of salt

Method

  • Preheat oven to 400 degrees
  • Place garlic heads on a square of foil, drizzle with oil (right onto the cloves), dress with pinch of salt, and wrap loosely
  • Roast until golden and soft, about 45 minutes – 1 hour
  • Unwrap and allow to cool before squeezing the cloves out of the peels
